Look for my trip report for Bahia Akumal last November - lots of detail.. We preferred the Tulum side nicer layout of bars/evening entertainment etc - the akumal side was very crowded as everyone with kids flocks to that beach because it is so shallow/calm.. Coba was nice (great buffet) but hard to get a seat by the pool and pretty far off from the beach.

Re: Bahia Grand Tulum vs Grand Coba. I suggest you look at a map of the resort and you can decide for yourself. The Coba is behind the Akumal section between the Akumal section and the highway. Tulum is the original resort which has been renovated a few times and a has really nice spread long the water footprint.
